I understand firsthand what the demands are like on your time. For over 30 years I have run restaurants from both the BOH and FOH. I will spend time in your restaurant/bar and treat it like it's my own - only recommending spending on the most necessary maintenance and attending to repairs with the urgency they require. At the same time making sure to coordinate the work thoughtfully so as to minimize the disruption to operations.
